Ingredients

  • 1.5 lb boneless, skinless chicken breasts
  • 6 cloves garlic cloves, minced
  • ½ cup fresh lemon juice
  • ¼ cup fresh parsley, finely chopped
  • 1 teaspoon salt
  • ½ teaspoon black pepper
  • 3 tablespoons olive oil
  • ½ cup all-purpose flour

Instructions

  1. 1

Cut chicken breasts into bite-sized pieces, approximately 1.5 inches.

  2. 2

In a bowl, combine minced garlic, lemon juice, parsley, salt, and pepper.

  3. 3

Add chicken pieces to the marinade and stir well. Cover and refrigerate for at least 15 minutes.

  4. 4

Remove chicken from marinade, reserving the liquid. Pat chicken dry with paper towels.

  5. 5

Place flour in a shallow dish and lightly dredge each chicken piece, shaking off excess.

  6. 6

Heat olive oil in a large skillet over medium-high heat until shimmering.

  7. 7

Working in batches, fry chicken pieces for 3-4 minutes per side until golden brown and cooked through.

  8. 8

Transfer cooked chicken to a paper towel-lined plate and drizzle with reserved marinade before serving.
