Ingredients
- 4 fillets white fish fillets
- ½ tsp salt
- ¼ tsp black pepper
- 2 tbsp olive oil
- 4 cups mixed greens
- ½ cup plain yogurt
- 1 tbsp lemon juice
- 1 tbsp balsamic glaze

Preheat oven to 375°F. Pat the 4 fish fillets dry and season both sides with the 1/2 tsp salt and 1/4 tsp pepper.

Roll each fillet tightly from the short end and secure with a toothpick. Place rolls seam-side down in a lightly oiled baking dish.

Brush the rolls with 1 tbsp of the olive oil. Bake until fish flakes easily with a fork, about 15-20 minutes.

In a small bowl, whisk the 1/2 cup yogurt, 1 tbsp lemon juice, and a pinch of salt until smooth. Set aside.

Toss the 4 cups mixed greens with the remaining 1 tbsp olive oil and a pinch of salt. Divide greens among 4 plates.

Place one fish roll on each plate. Drizzle with the yogurt sauce and finish with a few drops of balsamic glaze.
