Ingredients
- 2 large potatoes
- 1 cup cooked white fish
- 1 medium carrot
- ½ cup cheddar cheese
- 2 tbsp fresh parsley
- 1 cup breadcrumbs
- 1 large egg
- ½ cup vegetable oil

Boil the 2 large potatoes in salted water until fork-tender, about 20 minutes. Drain and let cool slightly.

Grate the 1 medium carrot and finely chop the 2 tbsp fresh parsley. Flake the 1 cup cooked fish into a large bowl.

Add the potatoes, carrot, parsley, and 0.5 cup shredded cheddar to the fish. Season with salt and pepper and mash until well combined.

Shape the mixture into 8 oval croquettes. Place the 1 cup breadcrumbs in a shallow dish and beat the 1 egg in another.

Dip each croquette into the beaten egg, then roll in breadcrumbs to coat evenly.

Heat the 0.5 cup vegetable oil in a large skillet over medium-high. Fry the croquettes in batches until golden brown and crispy, about 3-4 minutes per side.
