Ingredients
- 1 lb fish fillets
- 2 medium carrots
- 2 medium potatoes
- 1 medium onion
- 4 cups vegetable broth
- ¼ cup fresh parsley

Peel and dice the 2 carrots and 2 potatoes into 1/2 inch cubes. Thinly slice the 1 onion.

In a large pot, heat 1 tbsp olive oil over medium. Add the sliced onion and cook until soft, about 3 minutes.

Add the 4 cups vegetable broth, carrots, and potatoes. Bring to a boil, then reduce heat and simmer until vegetables are tender, about 10 minutes.

Cut the 1 lb fish fillets into 2 inch chunks and add to the pot. Simmer until fish is opaque and flakes easily, about 5 minutes.

Stir in the 1/4 cup chopped parsley. Season with salt and pepper to taste. Serve hot.
