Finnish Pulla

A soft, lightly sweet cardamom bread braided and topped with poppy seeds, perfect for coffee or tea.

Ingredients

  • 3.5 cups all-purpose flour
  • 1 cup milk
  • ½ cup sugar
  • ½ cup butter
  • 1 packet active dry yeast
  • 1 teaspoon cardamom
  • 1 large egg
  • 1 tablespoon poppy seeds

Instructions

    Warm the 1 cup milk and 0.5 cup butter in a small saucepan over low until butter melts and mixture is warm to the touch, about 3 minutes. Remove from heat.

    In a large bowl, stir the warm milk mixture with 0.5 cup sugar, 1 packet yeast, and 1 teaspoon cardamom. Let sit until foamy, about 5 minutes.

    Beat in 1 egg and gradually add 3.5 cups flour, stirring until a soft dough forms. Knead on a floured surface until smooth and elastic, about 8 minutes.

    Place dough in a greased bowl, cover, and let rise in a warm spot until doubled, about 1 hour.

    Punch down dough, divide into 3 equal ropes, and braid them on a baking sheet. Cover and let rise again for 30 minutes.

    Brush the braid with beaten egg (use the remaining egg or a little milk) and sprinkle with 1 tablespoon poppy seeds.

    Bake at 375°F until golden brown and hollow-sounding when tapped, about 25 minutes. Cool before slicing.
