Finnish Fish Soup

Ingredients

  • 1 lb salmon fillet
  • 2 medium potatoes
  • 1 cup heavy cream
  • 4 cups fish or vegetable broth
  • ¼ cup dill
  • 2 tbsp butter

Instructions

    In a large pot, melt the 2 tbsp butter over medium heat. Add the 2 medium potatoes, peeled and diced, and cook for 2 minutes, stirring occasionally.

    Pour in the 4 cups broth and bring to a boil. Reduce heat and simmer until potatoes are tender, about 10 minutes.

    Cut the 1 lb salmon into bite-sized pieces and add to the pot. Cook until salmon is opaque and flakes easily, about 5 minutes.

    Stir in the 1 cup heavy cream and 0.25 cup chopped dill. Heat through for 2 minutes, but do not boil. Season with salt and pepper to taste.

    Serve hot, garnished with extra dill if desired.
