Ingredients
- 2 steaks filet mignon steaks
- 1 teaspoon salt
- ½ teaspoon black pepper
- 2 tablespoons olive oil
- 2 tablespoons butter
- ½ cup microgreens

Pat the 2 filet mignon steaks dry with paper towels, then season both sides with the 1 tsp salt and 1/2 tsp black pepper.

Heat the 2 tbsp olive oil in a heavy skillet over high heat until shimmering, about 2 minutes. Carefully place the steaks in the pan and sear without moving for 3-4 minutes, until a deep brown crust forms.

Flip the steaks, add the 2 tbsp butter, and tilt the pan to baste the steaks with the melting butter. Cook for another 3-4 minutes for medium-rare, or until the internal temperature reaches 130°F.

Transfer the steaks to a plate and let them rest for 5 minutes. Spoon the pan sauce over the steaks and top with the 1/2 cup microgreens before serving.
