Fattoush with Halloumi

A quick and satisfying salad with crispy pita, fresh herbs, juicy tomatoes, and golden halloumi, all tossed in a simple lemony dressing.

Ingredients

  • 2 pieces pita bread
  • 200 g halloumi cheese
  • 2 medium tomatoes
  • 1 medium cucumber
  • 1 cup fresh parsley
  • ½ cup fresh mint

Instructions

    Cut the 2 pita breads into bite-size pieces and toast in a dry skillet over medium heat until crisp and golden, about 5 minutes. Set aside.

    Slice the 200g halloumi into 1cm thick pieces and pan-fry in a lightly oiled skillet over medium-high heat until golden brown on both sides, about 4 minutes total.

    Chop the 2 tomatoes and 1 cucumber into bite-size chunks and place in a large bowl with the 1 cup parsley and 1/2 cup mint leaves.

    Add the crispy pita and fried halloumi to the bowl. Drizzle with olive oil and lemon juice, sprinkle with salt and sumac if you have it, and toss gently to combine.

    Serve immediately while the pita is still crunchy and the halloumi is warm.
