Ingredients
- 2 cups dosa batter
- 2 large eggs
- 1 medium, finely chopped tomato
- 1 small, finely chopped onion
- 2 tbsp, chopped cilantro
- ½ tsp chili powder

Heat a non-stick skillet over medium heat. Pour 1/2 cup of the dosa batter and spread it into a thin circle, about 8 inches across.

Crack 1 egg directly onto the dosa and spread it evenly with a spoon. Sprinkle with a pinch of salt and 1/4 tsp chili powder.

Scatter half of the chopped tomato, onion, and cilantro over the egg. Cook until the edges turn golden and crisp, about 3-4 minutes.

Fold the dosa in half and press gently. Cook for another 1-2 minutes until the egg is set and the dosa is crispy.

Repeat with the remaining batter and toppings. Serve hot with chutney or ketchup.
