Easy Sushi Rolls at Home

Ingredients

  • 2 cups sushi rice (or short-grain white rice, cooked)
  • 2 tbsp rice vinegar
  • 4 sheets nori (seaweed sheets)
  • 1 whole cucumber
  • 1 whole avocado
  • 3 tbsp soy sauce
  • 1 tsp wasabi

Instructions

    If rice is warm, cool to room temperature (about 15 min). Warm rice falls apart when rolling.

    Stir rice vinegar into the cooled rice until every grain glistens. Let sit 2 minutes.

    Slice cucumber lengthwise into thin strips. Pit and slice avocado into thin lengthwise strips.

    Place one nori sheet shiny-side down on a cutting board. Spread 1/2 cup rice evenly across, leaving 1-inch border at the top.

    Arrange 2-3 cucumber strips and 2-3 avocado slices horizontally across the rice center.

    Roll the bottom edge over the filling, then roll tightly toward you. Wet the top border with water so it seals.

    Repeat with remaining nori, rice, and fillings. Let rolls rest 2 minutes to set.

    Slice each roll into 6-8 pieces using a very sharp knife. Wipe the blade between cuts.

    Serve with soy sauce, wasabi, and pickled ginger on the side.
