- 1 cup milk
- 2 large eggs
- 2 tablespoons sugar
- 1 teaspoon baking powder

- 2 cups mixed berries
- ½ cup heavy cream

In a large bowl, whisk together 1 cup flour, 1 tbsp sugar, 1 tsp baking powder, and 1/4 tsp salt. In a separate bowl, beat 2 eggs with 1 cup milk, then pour into the dry ingredients and whisk until smooth—lumps are okay.

Heat a large nonstick skillet or griddle over medium heat. Lightly grease with butter or oil. Drop tablespoonfuls of batter onto the hot surface, leaving space between each. Cook until bubbles form on the surface and edges look set, about 2 minutes.

Flip each pancake and cook until golden brown on the other side, about 1-2 minutes. Transfer to a plate and keep warm while cooking the remaining batter.

In a small saucepan, combine 2 cups mixed berries and 1 tbsp sugar. Cook over medium heat, stirring occasionally, until the berries release their juices and the mixture thickens slightly, about 5-7 minutes. Mash lightly with a fork if you prefer a smoother compote.
