Ingredients

  • 1.5 lb white fish fillets
  • 2 medium tomatoes
  • 2 red chili peppers
  • 1 green bell pepper
  • 1 medium onion
  • 1 lime

Instructions

  1. 1

Season the 1.5 lb fish fillets with salt and pepper. Heat 2 tbsp oil in a large skillet over medium-high heat and cook the fish until golden and opaque, about 3-4 minutes per side. Remove and set aside.

  2. 2

In the same skillet, add 1 sliced onion, 1 chopped green bell pepper, and 2 minced red chilies. Cook over medium heat until softened, about 5 minutes.

  3. 3

Add 2 chopped tomatoes and cook until they break down into a thick sauce, about 5 minutes. Stir in the juice of 1 lime and season with salt.

  4. 4

Return the fish to the skillet, spoon the sauce over it, and simmer for 2 minutes until heated through. Serve with extra lime wedges.
