Ingredients

  • 1 lb chicken breast, cut into bite-sized pieces
  • ¾ cup plain yogurt
  • ¾ cup canned crushed tomatoes
  • ½ medium onion, finely diced
  • 1 tsp garam masala
  • ¼ cup fresh coriander leaves

Instructions

    Toss chicken with 0.25 cup yogurt, salt, and half the garam masala. Let sit 2 minutes.

    Heat oil in a 12-inch skillet over medium-high. Sear chicken 3–4 minutes, stirring occasionally, until golden on edges.

    Add diced onion to the pan, stirring, until softened and fragrant, about 2 minutes.

    Stir in crushed tomatoes, remaining 0.5 cup yogurt, and remaining garam masala. Simmer 4–5 minutes until sauce thickens slightly.

    Taste and adjust salt and pepper. Stir in coriander leaves.
