Ingredients

  • 1 lb boneless, skinless chicken thighs
  • ½ cup all-purpose flour
  • 10 cloves garlic cloves, divided
  • 3 tbsp soy sauce
  • 1.5 tbsp honey
  • ½ tbsp rice vinegar
  • 2 cups neutral cooking oil, for frying
  • 1 tsp sesame seeds (white or black)

    Pat chicken dry with paper towels. Cut into 2-inch pieces and season generously with salt and pepper.

    Toss chicken in flour to coat evenly. Heat oil in a heavy skillet to 350°F — test by dropping a pinch of flour; it should sizzle immediately.

    Fry chicken in batches, without crowding, for 5 minutes until golden. Remove and drain on paper towels.

    Return all chicken to oil for 2 minutes more to finish crisping. Remove and drain again.

    In the same oil, fry minced garlic (6 cloves) for 90 seconds until golden and fragrant. Scoop out with a slotted spoon onto paper towels.

    Whisk together soy sauce, honey, and rice vinegar. Toss warm chicken in glaze until sticky. Top with fried garlic and sesame seeds, then serve.
