Ingredients

  • 1.25 lb chicken thighs, boneless and skinless
  • ½ cup all-purpose flour
  • ¼ cup soy sauce
  • 4 cloves garlic cloves, minced
  • 2 tbsp granulated sugar
  • 3 cups neutral cooking oil for frying

Instructions

    Pat chicken thighs dry with paper towels. Season both sides generously with salt and black pepper.

    Dredge each thigh in flour, shaking off excess. Set aside on a clean plate.

    Heat oil in a heavy skillet over medium-high until a pinch of flour sizzles instantly (~2 minutes).

    Fry chicken 4–5 minutes per side until golden and cooked through. Transfer to a paper towel–lined plate.

    In a small bowl, whisk soy sauce, minced garlic, and sugar until sugar dissolves completely.
