Ingredients

  • 4 thighs chicken thighs, bone-in and skin-on
  • 2 tbsp olive oil
  • ¾ tsp salt
  • ½ tsp black pepper

Instructions

    Pat chicken thighs dry with paper towels, then season both sides with salt and pepper.

    Heat olive oil in a 12-inch cast iron skillet over medium-high until shimmering, about 90 seconds.

    Place thighs skin-side down and sear without moving until skin is golden brown, 6–8 minutes.

    Flip thighs and sear meat side 2 minutes until light brown, then transfer skillet to a 400°F oven.

    Roast until chicken reaches 165°F at the thickest part, about 12–14 minutes.

    Rest 5 minutes in the skillet, then serve hot.
