Ingredients

  • ½ lb shrimp, peeled & deveined
  • ½ cup shredded coconut (unsweetened)
  • ½ cup panko breadcrumbs
  • 2 tbsp ginger, minced fresh
  • 1 whole lime (zested + juiced)
  • 3 tbsp peanut butter, creamy

Instructions

    Pat shrimp dry. Combine coconut, panko, ginger, lime zest, salt, and pepper in a shallow bowl.

    Press each shrimp into the coconut mixture, coating all sides evenly until fully covered.

    Heat 2 tbsp oil in a large skillet over medium-high until shimmering, about 90 seconds.

    Working in batches, cook coated shrimp 2 minutes per side until golden and crispy edges show.

    Mix peanut butter, lime juice, 2 tbsp water, and a pinch of salt in a small bowl until smooth.
