Ingredients

  • 8 sheets rice paper sheets (bánh tráng nướng, or regular spring roll wrappers)
  • 2 cups packed fresh herbs (mint, cilantro, and Thai basil), leaves picked
  • 1 medium cucumber, sliced into thin matchsticks
  • 1 medium carrot, julienned
  • ¼ cup natural peanut butter
  • 1 lime + 2 tbsp sauce lime (juiced) + fish sauce
  • 2 cups neutral cooking oil for frying

Instructions

    Whisk peanut butter, lime juice, fish sauce, 2 tbsp water, and a pinch of sugar until smooth. Add more water if too thick.

    Heat oil in a heavy skillet over medium-high until a wooden chopstick dipped in sizzles immediately, ~3 minutes.

    Gently lay one rice paper sheet flat. Top with a small pinch each of herbs, cucumber, and carrot—don't overstuff.

    Roll the sheet tightly, folding in the sides like a burrito. Repeat with remaining sheets.
