Ingredients
- 8 sheets rice paper sheets (bánh tráng nướng, or regular spring roll wrappers)
- 2 cups packed fresh herbs (mint, cilantro, and Thai basil), leaves picked
- 1 medium cucumber, sliced into thin matchsticks
- 1 medium carrot, julienned
- ¼ cup natural peanut butter
- 1 lime + 2 tbsp sauce lime (juiced) + fish sauce
- 2 cups neutral cooking oil for frying
Instructions
- 1
Whisk peanut butter, lime juice, fish sauce, 2 tbsp water, and a pinch of sugar until smooth. Add more water if too thick.
- 2
Heat oil in a heavy skillet over medium-high until a wooden chopstick dipped in sizzles immediately, ~3 minutes.
- 3
Gently lay one rice paper sheet flat. Top with a small pinch each of herbs, cucumber, and carrot—don't overstuff.
- 4
Roll the sheet tightly, folding in the sides like a burrito. Repeat with remaining sheets.
- 5
Working in batches, slide rolls into hot oil and fry 60–90 seconds per side until they're golden brown and crackling.
- 6
Drain on paper towels. Serve hot with peanut sauce on the side for dipping.
