Ingredients
- 1.2 lbs pork rib chops (thin-cut, about 0.75-inch thick)
- 3 tbsp butter
- 4 clove garlic cloves, sliced thin
- ½ lime fresh lime
- 1 tsp salt
- ½ tsp black pepper

Pat pork ribs dry with paper towels. Season both sides generously with salt and black pepper.

Heat a 12-inch skillet over high heat until a drop of water sizzles on contact, ~2 minutes.

Lay ribs in the pan without moving them. Sear 3 minutes until edges char dark brown and crust forms.

Flip ribs once and sear the other side 2–3 minutes until caramelized. Remove to a plate.

Lower heat to medium. Add butter and sliced garlic to the same pan; cook until fragrant, 60 seconds.

Return ribs to pan and turn to coat in garlic butter. Squeeze lime juice over. Serve immediately.
