Crispy Pork Pierogi Skillet

Crispy Pork Pierogi Skillet

Ingredients

  • 1.5 lb frozen potato-cheddar pierogi (store-bought)
  • ½ lb ground pork
  • 1 medium, sliced yellow onion
  • ½ cup sour cream
  • 1 tsp smoked paprika
  • 2 tbsp fresh dill or chives (chopped)
  • 3 tbsp butter

Instructions

    Bring salted water to a boil in a large pot. Add frozen pierogi and cook until they float plus 2 minutes more. Drain and set aside.

    Heat 1 tbsp butter in a large skillet over medium-high. Brown ground pork, breaking it up with a spoon, until no pink remains, ~6 minutes. Stir in paprika and a pinch of salt. Transfer to a plate.

    Add remaining 2 tbsp butter to the skillet. Cook sliced onion over medium heat, stirring occasionally, until deeply golden and soft, ~8 minutes.

    Return cooked pierogi to the skillet with the onions. Add the cooked pork back in and toss gently to combine. Cook over medium-high until pierogi edges are golden and crispy, ~3 minutes.

    Divide pierogi among bowls. Top with a dollop of sour cream and scatter fresh dill over everything.
