Ingredients
- ½ lb ground pork
- 24 pieces round dumpling wrappers (gyoza skin)
- 4 oz firm tofu
- 1.5 cups napa cabbage, finely chopped
- 2 tbsp scallion, thinly sliced
- 3 tbsp soy sauce
- 1.5 tbsp rice vinegar
- 1 tsp sesame oil

Press tofu in a clean kitchen towel for 1 minute to remove excess water, then crumble into small pieces.

Mix ground pork, crumbled tofu, chopped cabbage, scallion, 1 tbsp soy sauce, 0.5 tsp sesame oil, and a pinch each of salt and pepper in a bowl until combined.

Place 1 tsp filling in the center of each dumpling wrapper. Wet the edge with water, fold in half, then pinch the sides to seal.

Heat 1 tbsp neutral oil in a 12-inch skillet over medium-high until shimmering, ~1 minute.

Add dumplings in a single layer, flat-side down. Fry without moving until bottoms are golden brown, 3–4 minutes.

Add 0.25 cup water, cover, and steam for 5 minutes until wrappers are tender and water evaporates.

Whisk remaining 2 tbsp soy sauce, rice vinegar, and 0.5 tsp sesame oil in a small bowl for dipping sauce.
