Ingredients

  • 1.5 lb pork shoulder, thinly sliced (about 1/4 inch)
  • 1 large bell pepper (red or green), sliced into thin strips
  • 1 medium yellow onion, sliced into thin strips
  • 1 whole lime (juiced)
  • 1 tsp dried oregano
  • 1 pinch salt and black pepper to taste

Instructions

    Heat 2 tbsp oil in a large skillet over medium-high until it shimmers, about 90 seconds.

    Work in two batches: sear pork slices 2–3 minutes per side until edges brown and crisp. Transfer to a plate.

    In the same skillet, sauté peppers and onions over medium-high, stirring occasionally, until soft and charred at edges, 4–5 minutes.

    Return pork to the skillet. Add oregano, lime juice, salt, and pepper. Toss to combine.

    Serve hot with warm tortillas, lime wedges, and fresh cilantro if desired.
