Ingredients

  • 8 oz pre-cooked carnitas or shredded pork
  • 2 each corn tortillas (6-inch)
  • ½ cup refried beans
  • ¼ cup cotija cheese, crumbled
  • ¼ cup red onion, thinly sliced
  • 2 tbsp fresh cilantro, chopped

Instructions

    Heat 1 tbsp olive oil in a large skillet over medium-high heat until shimmering, about 90 seconds.

    Place a tortilla flat in the pan and cook 2 minutes per side until crispy and light brown.

    Spread 3 tbsp refried beans on the crispy tortilla, leaving a 1/2-inch border.

    Top with half the pork, cotija, red onion, and cilantro. Transfer to a plate and keep warm.

    Repeat steps 2–4 with the second tortilla and remaining toppings.

    Serve immediately with lime wedges and hot sauce on the side.
