Ingredients
- 1.5 lbs pork shoulder, cut into 1.5-inch chunks
- 2 whole avocado
- 1 large tomato, diced
- ¼ cup white onion, minced
- ¼ cup fresh cilantro, chopped
- 1 whole lime (juiced)

Pat pork chunks dry with paper towels. Season generously with salt and black pepper.

Heat 0.5 inch of oil in a large skillet over medium-high heat until a piece of pork sizzles immediately when it touches the surface.

Working in batches, fry pork chunks without stirring for 3-4 minutes per side until deep golden brown and crispy on edges.

Transfer cooked pork to a paper-towel-lined plate. Let rest 2 minutes while you prep the guac and pico.

Scoop avocado into a bowl, mash with a fork, add half the lime juice and a pinch of salt. Mix until creamy.

Combine tomato, onion, cilantro, and remaining lime juice in another bowl. Season with salt and pepper to taste.
