Ingredients

  • 4 chops pork chops (1.5 inches thick, bone-in if possible)
  • 2 ears or 1.5 cups fresh corn (or frozen kernels)
  • 1 lb baby potatoes
  • 4 cloves garlic, minced
  • 2 tbsp fish sauce (or soy sauce)
  • 1 lime lime (juiced)
  • 1 tbsp brown sugar
  • 3 tbsp neutral oil

Instructions

    Pat pork chops dry with paper towels. Season aggressively with salt and pepper on both sides.

    Heat oil in a large skillet over medium-high until it shimmers, about 90 seconds.

    Sear pork chops 4 minutes per side without moving. Surface should be golden and crispy.

    Push chops to the side. Add minced garlic to the center and cook 30 seconds until fragrant.

    Add fish sauce, lime juice, brown sugar, corn, and halved baby potatoes. Toss to coat.

    Cook uncovered 6–8 minutes, stirring vegetables occasionally, until potatoes are tender and edges char.
