Ingredients

  • 3 lb whole chicken, cut into pieces (or 2 lb chicken thighs)
  • 6 cloves garlic, minced
  • 2 whole red chili peppers, chopped (or 1 tsp red pepper flakes)
  • 1 whole lemon (juiced)
  • ⅓ cup olive oil
  • 1 tbsp paprika
  • 1 pinch salt and black pepper to taste

Instructions

    Pat chicken pieces dry with paper towels. Arrange in a large roasting pan or cast-iron skillet.

    Combine minced garlic, chopped chili, lemon juice, olive oil, paprika, salt, and pepper in a bowl.

    Rub the marinade all over the chicken, coating both sides generously. Let sit for 15 minutes at room temperature.

    Preheat oven to 425°F. Roast chicken uncovered for 50–60 minutes, until skin is deep golden and an instant-read thermometer reaches 165°F in the thickest part.

    Remove from oven and rest for 5 minutes before serving. The skin should be crackling and the pan drippings deep and rich.
