  • ½ medium onion, finely minced
  • ⅓ cup breadcrumbs
  • 1 whole egg
  • 1 tbsp Dijon mustard
  • 2 tbsp neutral cooking oil

Instructions

    Combine pork, minced onion, breadcrumbs, egg, mustard, salt, and pepper in a bowl until just mixed—don't overwork.

    Divide mixture into 4 equal portions and shape each into a flat oval patty about 0.75 inches thick.

    Heat oil in a 12-inch skillet over medium-high heat until shimmering, about 90 seconds.

    Slide patties into the skillet without moving them and sear 4–5 minutes until deep golden brown on the bottom.
