Ingredients

  • 1 medium (about 300g) lotus root
  • 2 tbsp vegetable oil
  • 1 tbsp soy sauce
  • 1 tbsp sesame seeds
  • ½ tsp salt

Instructions

  1. 1

Peel the lotus root and cut into thin sticks, about 2 inches long and 1/4 inch thick. Rinse well under cold water and pat dry with a towel.

  2. 2

Heat 2 tbsp vegetable oil in a large skillet over medium-high heat. Add the lotus root sticks in a single layer—don't crowd the pan—and cook undisturbed for 3-4 minutes until golden brown on the bottom.

  3. 3

Stir and continue cooking for another 5-7 minutes, stirring occasionally, until the sticks are crispy and deeply golden all over. They should feel firm and sound crunchy when stirred.

  4. 4

Turn off the heat. Drizzle 1 tbsp soy sauce over the hot lotus root and toss quickly to coat—the soy sauce will sizzle and glaze the sticks.

  5. 5

Sprinkle with 1 tbsp sesame seeds and 1/2 tsp salt. Toss once more and serve hot as a snack or side dish.
