Ingredients
- 6 cups kale, chopped (about 1 bunch)
- ½ cup parmesan cheese, finely grated
- 2 cups bread (crusty or stale), cut into 1/2-inch cubes
- 1 whole lemon, juiced
- 2 cloves garlic, minced
- ½ tsp anchovy paste (or 2 anchovy fillets, minced)

Heat 2 tbsp olive oil in a large skillet over medium-high. Add bread cubes and toast, tossing occasionally, until golden and crispy, about 5 minutes. Transfer to a plate.

In a small bowl, whisk together lemon juice, minced garlic, anchovy paste, 2 tbsp olive oil, salt, and pepper until emulsified.

Place kale in a large bowl. Drizzle with dressing and massage with your hands for 60 seconds until kale softens and darkens slightly.

Toss in half the parmesan and most of the croutons, reserving some for topping.

Divide between bowls. Top with remaining croutons and a final shower of parmesan. Serve immediately.
