Ingredients

  • 2 whole onion, large yellow or sweet
  • ½ cup flour, all-purpose
  • ¾ cup breadcrumbs, panko
  • 1 whole egg

    Slice onions into 1/2-inch-thick rings and separate the layers into individual rings.

    Pour oil 2 inches deep into a heavy skillet and heat to 350°F until a breadcrumb sizzles immediately.

    Whisk egg with 2 tablespoons water in one bowl, mix flour with salt and pepper in another, and breadcrumbs with salt in a third.

    Coat each ring in flour, shake off excess, dip in egg, then roll in breadcrumbs and place on a plate.

    Fry rings in batches 2-3 minutes per side until deep golden brown, then drain on paper towels.
