Ingredients

  • 1 lb fresh okra pods, trimmed and patted dry
  • ½ cup all-purpose flour
  • ½ cup cornmeal
  • 1 tsp salt
  • ½ tsp black pepper
  • ¼ tsp cayenne pepper
  • 2 quarts vegetable oil for frying

    Trim okra pods and pat completely dry with paper towels. Moisture will prevent proper crisping.

    Mix flour, cornmeal, salt, black pepper, and cayenne pepper in a shallow bowl.

    Heat vegetable oil in a deep pot or fryer to 350°F (175°C).

    Working in batches, coat okra pods in the cornmeal mixture, shaking off excess.

    Carefully add coated okra to hot oil and fry for 3-4 minutes until golden brown and crispy.

    Remove fried okra with a slotted spoon and transfer to a paper towel-lined plate.

    Season with additional salt while still warm. Serve immediately.
