Ingredients

  • 2 large russet potatoes
  • 1 tablespoon olive oil
  • ½ teaspoon kosher salt
  • ¼ teaspoon black pepper
  • 1 cup sharp cheddar cheese, shredded
  • ½ cup sour cream
  • ½ cup bacon bits or crumbled cooked bacon
  • 2 tablespoon fresh chives, chopped
  • 2 tablespoon butter

Instructions

    Preheat oven to 400°F (200°C).

    Scrub potatoes under cold running water and pat dry with paper towels.

    Poke each potato multiple times with a fork to allow steam to escape.

    Rub potatoes with olive oil and sprinkle with kosher salt and black pepper on all sides.

    Place potatoes directly on the oven rack and bake for 40-45 minutes until tender when pierced with a fork.

    Remove from oven and let cool for 2 minutes.

    Carefully cut each potato in half lengthwise.

    Fluff the insides with a fork and place a pat of butter inside each half.

    Top with shredded cheddar cheese while potatoes are still hot.

    Add a dollop of sour cream, bacon bits, and fresh chives.
