Ingredients

  • ¾ lb white fish fillets (cod, mahi, or halibut)
  • ½ cup all-purpose flour
  • ½ cup beer (light lager)
  • 2 cups cabbage, shredded
  • ½ cup crema or sour cream
  • 1 whole lime (juiced)
  • 6 whole corn or flour tortillas

Instructions

    Whisk flour, beer, salt, and pepper in a bowl until smooth batter forms.

    Heat 1 inch of neutral oil in a skillet over medium-high until shimmering, ~2 minutes.

    Pat fish dry, dredge in batter, and fry in batches until golden and flaking, 3–4 minutes per side.

    Toss shredded cabbage with half the lime juice and a pinch of salt; set aside.

    Stir crema with remaining lime juice and a pinch of salt until loose and pourable.
