Ingredients

  • 2 pieces (about 6 oz each) duck breast, skin on
  • 2 medium red chilies, sliced
  • 1 tbsp ginger, minced
  • 3 cloves garlic, minced
  • 2 tbsp lime juice
  • 1 tbsp soy sauce
  • 1 medium cucumber, sliced
  • 1 cup total (mixed fresh) cherry tomatoes + lettuce

Instructions

    Score the duck skin in a crosshatch pattern. Pat dry with a paper towel.

    Heat a skillet over medium-high. Place duck skin-side down, no oil needed. Sear 6 minutes until skin is golden and crispy.

    Flip duck. Cook 4 minutes more for medium-rare center. Transfer to a cutting board; rest 2 minutes.

    In the same skillet, add ginger and garlic. Stir constantly for 30 seconds until fragrant, then add chili, lime juice, and soy sauce.

    Simmer sambal for 1 minute. Taste and adjust heat or lime to preference.
