Ingredients

  • 2 breasts (about 6 oz each) chicken breasts, boneless skinless
  • ½ cup all-purpose flour
  • 1 large eggs
  • ¾ cup panko breadcrumbs
  • 1.25 lbs frozen french fries
  • ¼ cup ketchup
  • 1 handful fresh lettuce or romaine
  • 1 whole lemon

    Start the fries in the oven per package directions (usually 400°F, ~20 minutes).

    Pat chicken breasts dry. Lay between plastic wrap and pound to 1/4-inch thickness.

    Set up three shallow bowls: flour, beaten egg, and panko. Coat each chicken breast in flour, then egg, then panko, pressing gently.

    Heat 0.25 cup oil in a 12-inch skillet over medium-high until it shimmers, about 90 seconds.

    Sear each chicken breast 3–4 minutes per side without moving until golden brown and cooked through.

    Serve chicken hot with fries, lettuce, ketchup on the side, and lemon wedges to squeeze.
