Ingredients

  • 2 medium chicken breasts, boneless skinless
  • ½ cup all-purpose flour
  • 2 whole eggs
  • ¾ cup panko breadcrumbs
  • 10 oz frozen french fries
  • 1 medium of each cucumber (sliced) + tomato (sliced)
  • ½ cup Greek yogurt mixed with lemon juice and garlic

Instructions

  1. 1

Pound chicken breasts between plastic wrap until 1/4-inch thick. Pat dry with paper towels.

  2. 2

Set up three shallow bowls: flour, beaten eggs, panko breadcrumbs. Coat each chicken breast in flour, then egg, then breadcrumbs, pressing gently.

  3. 3

Heat 0.25 inch oil in a large skillet over medium-high until it shimmers, about 2 minutes. Sear breaded chicken 3 minutes per side until golden brown and crispy.

  4. 4

While chicken cooks, bake frozen fries at 425°F for 12 minutes or according to package instructions until crispy.

  5. 5

Toss sliced cucumber and tomato with a pinch of salt and pepper. Stir yogurt sauce and transfer to a small bowl.

  6. 6

Plate schnitzel, fries, and fresh salad on the side. Serve yogurt sauce for dipping.
