Ingredients
- 2 medium chicken breasts, boneless skinless
- ½ cup all-purpose flour
- 2 whole eggs
- ¾ cup panko breadcrumbs
- 10 oz frozen french fries
- 1 medium of each cucumber (sliced) + tomato (sliced)
- ½ cup Greek yogurt mixed with lemon juice and garlic

Pound chicken breasts between plastic wrap until 1/4-inch thick. Pat dry with paper towels.

Set up three shallow bowls: flour, beaten eggs, panko breadcrumbs. Coat each chicken breast in flour, then egg, then breadcrumbs, pressing gently.

Heat 0.25 inch oil in a large skillet over medium-high until it shimmers, about 2 minutes. Sear breaded chicken 3 minutes per side until golden brown and crispy.

While chicken cooks, bake frozen fries at 425°F for 12 minutes or according to package instructions until crispy.

Toss sliced cucumber and tomato with a pinch of salt and pepper. Stir yogurt sauce and transfer to a small bowl.
