Ingredients
- 2 large (10-inch) tortillas
- 1 cup, packed fresh spinach
- ½ pepper, diced bell pepper (any color)
- ¾ cup mozzarella cheese, shredded

Heat 1 tablespoon oil in a skillet over medium-high. Add bell pepper and cook 2 minutes, stirring occasionally, until slightly soft.

Add spinach and cook 60 seconds, stirring, until wilted. Transfer to a plate.

Lay one tortilla on the skillet. Sprinkle half the cheese, then the spinach-pepper mixture, then the remaining cheese.
