Ingredients

  • 2 large (10-inch) tortillas
  • 1 cup, packed fresh spinach
  • ½ pepper, diced bell pepper (any color)
  • ¾ cup mozzarella cheese, shredded

Instructions

    Heat 1 tablespoon oil in a skillet over medium-high. Add bell pepper and cook 2 minutes, stirring occasionally, until slightly soft.

    Add spinach and cook 60 seconds, stirring, until wilted. Transfer to a plate.

    Lay one tortilla on the skillet. Sprinkle half the cheese, then the spinach-pepper mixture, then the remaining cheese.

    Top with the second tortilla. Cook 2–3 minutes until the bottom is golden brown, then flip carefully.

    Cook the other side 1–2 minutes until golden and cheese is fully melted inside.

    Slide onto a cutting board, cut into wedges, and serve with fries and salsa.
