Ingredients

  • 1 lb squid, cleaned and cut into 1/4-inch rings
  • ½ cup all-purpose flour
  • 3 cups neutral cooking oil
  • ¾ cup marinara sauce
  • 1 whole lemon
  • 1 pinch salt and black pepper to taste

    Pat squid dry on paper towels. Season generously with salt and black pepper.

    Toss squid rings in flour until evenly coated, shaking off excess in a fine-mesh strainer.

    Heat oil in a heavy pot or deep skillet to 350°F (test: a pinch of flour sizzles immediately).

    Working in two batches, fry squid 1.5 to 2 minutes until edges curl and surface turns golden. Don't crowd the pan.

    Transfer to a paper-towel-lined plate. Warm marinara gently in a small saucepan or microwave.
