Ingredients

  • 1 lb squid, cleaned and sliced into rings
  • ½ cup all-purpose flour
  • ½ cup sweet chili sauce
  • 3 cups mixed greens
  • 1 whole lemon
  • 2 cups neutral oil for frying
  • 1 to taste sea salt and black pepper

Instructions

    Pat squid rings dry with paper towels. Season with salt and pepper.

    Toss squid with flour until evenly coated. Shake off excess flour.

    Heat oil in a large skillet over medium-high until shimmering, ~3 minutes. Working in batches, fry squid until golden and crispy, 60-90 seconds per batch.

    Transfer calamares to a paper-towel-lined plate. Squeeze fresh lemon over top.

    Toss greens with a pinch of salt, pepper, and a squeeze of lemon juice. Arrange on a plate.
