Ingredients
- 1 lb squid (cleaned, sliced into 1/4-inch rings)
- ¾ cup all-purpose flour
- 2 cups neutral oil (for frying)
- 1 tsp salt
- ½ tsp black pepper
- 1 whole lemon (cut into wedges)
Instructions
- 1
Pat squid rings dry with paper towels. Season with salt and pepper.
- 2
Pour flour into a shallow bowl. Toss squid in flour until fully coated; shake off excess.
- 3
Heat oil in a deep skillet to 350°F. Oil should shimmer and move freely when swirled.
- 4
Working in batches, fry squid 60–90 seconds until pale golden. Do not crowd the pan.
- 5
Transfer squid to a paper-towel-lined plate. Season with a pinch of salt while still hot.
