Ingredients

  • ¾ lb beef cutlets (or thin-sliced sirloin)
  • ⅓ cup all-purpose flour
  • 1 large egg
  • ¾ cup panko breadcrumbs
  • ¼ cup parmesan, finely grated
  • 1 whole lemon

Instructions

    Pat beef dry. Place between plastic wrap, pound to 1/4-inch thickness using a mallet or rolling pin.

    Set up three shallow bowls: flour in one, beaten egg in another, panko mixed with parmesan in the third.

    Dredge each cutlet in flour, tap off excess, dip in egg, then coat fully in panko-parmesan mixture.

    Heat olive oil and butter in a 12-inch skillet over medium-high until the foam subsides, ~90 seconds.

    Sear cutlets 2 minutes per side without moving until golden brown and crispy. Transfer to a plate.

    Squeeze fresh lemon over the top. Serve immediately with arugula on the side if desired.
