Ingredients
- ¾ lb beef cutlets (or thin-sliced sirloin)
- ⅓ cup all-purpose flour
- 1 large egg
- ¾ cup panko breadcrumbs
- ¼ cup parmesan, finely grated
- 1 whole lemon

Pat beef dry. Place between plastic wrap, pound to 1/4-inch thickness using a mallet or rolling pin.

Set up three shallow bowls: flour in one, beaten egg in another, panko mixed with parmesan in the third.

Dredge each cutlet in flour, tap off excess, dip in egg, then coat fully in panko-parmesan mixture.

Heat olive oil and butter in a 12-inch skillet over medium-high until the foam subsides, ~90 seconds.
