Ingredients
- 2 cups cooked jasmine rice (leftover or day-old)
- ¾ lb beef sirloin or ribeye, sliced 1/4-inch thick
- ¼ cup crispy fried shallots
- 1 whole lime
- 2 tbsp fish sauce
- 1 tbsp chili paste (sriracha or sambal oelek)
- 1 whole cucumber (thinly sliced) + fresh herbs (cilantro, mint, Thai basil, chopped)

Heat 2 tbsp oil in a large skillet over medium-high until smoking, ~90 seconds.

Sear beef slices 60 seconds per side without moving. Edges should be browned; don't overcrowd.

Transfer beef to a plate. Spread cooked rice on the same skillet, press down, cook 4 minutes until bottom is golden and crispy.
