Ingredients

  • 2 cups cooked jasmine rice (leftover or day-old)
  • ¾ lb beef sirloin or ribeye, sliced 1/4-inch thick
  • ¼ cup crispy fried shallots
  • 1 whole lime
  • 2 tbsp fish sauce
  • 1 tbsp chili paste (sriracha or sambal oelek)
  • 1 whole cucumber (thinly sliced) + fresh herbs (cilantro, mint, Thai basil, chopped)

Instructions

    Heat 2 tbsp oil in a large skillet over medium-high until smoking, ~90 seconds.

    Sear beef slices 60 seconds per side without moving. Edges should be browned; don't overcrowd.

    Transfer beef to a plate. Spread cooked rice on the same skillet, press down, cook 4 minutes until bottom is golden and crispy.

    Whisk lime juice, fish sauce, and chili paste in a small bowl until smooth.

    Divide crispy rice between bowls. Top with beef, cucumber slices, herbs, and fried shallots.
