Ingredients
- 8 count corn tortillas
- 1 can (15 oz) canned black beans, drained and rinsed
- 1.5 cups shredded cheddar or Oaxaca cheese
- 1 tsp cumin
- 1 count lime
- ¼ cup fresh cilantro or white onion, chopped
- 3 tbsp olive oil

Warm beans in a small saucepan over medium-low, then stir in cumin.

Heat 1.5 tbsp oil in a large skillet over medium-high until shimmering.

Fry each tortilla 60 seconds per side until crispy and light golden. Transfer to a plate.

Sprinkle cheese evenly over each fried tortilla, dividing among all 8.

Return skillet to medium. Slide 4 cheese-topped tortillas into the pan and cook until cheese melts and bottom crisps, ~2 minutes.

Transfer to a platter. Repeat with remaining 4 tortillas and oil if needed.
