Ingredients

  • 1 cup pre-cooked shredded chicken
  • ¾ cup white cheddar or mozzarella, shredded
  • 1.5 cups arepa flour (corn flour for arepas)
  • 1 cup warm water
  • 1 whole lime (juiced)
  • ½ cup sour cream or crema
  • 2 cups neutral oil for frying

Instructions

    Mix arepa flour, warm water, and a pinch of salt until a soft dough forms, about 1 minute.

    Stir lime juice and a pinch of salt into sour cream; set the crema aside.

    Form 4 golf-ball-sized dough balls and flatten to thick discs. Make a pocket in each and fill with chicken and cheese.

    Heat oil in a deep skillet over medium-high until shimmering. Fry arepas 3 minutes per side until deep golden.

    Transfer arepas to a paper towel–lined plate. Serve hot with lime crema on the side.
