Creamy Chicken Fricassée

Ingredients

  • 1.5 lbs boneless, skinless chicken breasts
  • 8 oz mushrooms, sliced
  • ¾ cup dry white wine
  • ¾ cup chicken broth
  • ½ cup heavy cream
  • 1 tbsp Dijon mustard
  • 2 tbsp fresh tarragon or parsley, chopped

Instructions

    Pat chicken dry. Season generously with salt and black pepper on both sides.

    Heat 2 tbsp butter in a large skillet over medium-high. Sear chicken 5 minutes per side until golden. Remove to a plate.

    Add mushrooms to the same skillet and cook, stirring, until they release liquid and edges brown, about 4 minutes.

    Pour in white wine and scrape up browned bits from the pan. Stir in broth and mustard, then return chicken.

    Simmer uncovered for 4 minutes until chicken is cooked through. Stir in cream and fresh herbs.

    Taste and adjust salt and pepper. Serve immediately over egg noodles or crusty bread.
