Ingredients
- 1.5 lbs boneless, skinless chicken breasts
- 8 oz mushrooms, sliced
- ¾ cup dry white wine
- ¾ cup chicken broth
- ½ cup heavy cream
- 1 tbsp Dijon mustard
- 2 tbsp fresh tarragon or parsley, chopped

Pat chicken dry. Season generously with salt and black pepper on both sides.

Heat 2 tbsp butter in a large skillet over medium-high. Sear chicken 5 minutes per side until golden. Remove to a plate.

Add mushrooms to the same skillet and cook, stirring, until they release liquid and edges brown, about 4 minutes.
