Ingredients

  • 2 pieces (about 6 oz each) boneless, skinless chicken breast
  • 2 tbsp Dijon mustard
  • ½ cup heavy cream
  • 1 small shallot, minced
  • 1 cup white rice, cooked
  • 1 tbsp sesame seeds
  • 8 oz frozen french fries

Instructions

    Start the fries in the oven at 425°F according to package directions, about 20 minutes.

    Pat the chicken breasts dry with paper towels. Season both sides generously with salt and pepper.

    Heat 2 tbsp olive oil in a heavy skillet over medium-high until shimmering. Sear chicken 6 minutes per side without moving.

    Transfer chicken to a plate. Add minced shallot to the pan and cook 1 minute until fragrant.

    Whisk in mustard and cream. Return chicken to pan and simmer gently for 4 minutes until sauce coats the back of a spoon.

    Toss warm rice with sesame seeds. Plate chicken with sauce, rice, and fries alongside.
