Creamy Broccoli Cheddar Soup

Ingredients

  • 2 tbsp butter
  • 1 medium onion, diced
  • 4 cups broccoli florets
  • 4 cups vegetable broth
  • 1.5 cups sharp cheddar cheese, shredded
  • ½ cup heavy cream
  • 1 pinch salt and black pepper to taste

Instructions

    Melt butter in a large pot over medium heat. Add onion and cook, stirring often, until soft and translucent, about 4 minutes.

    Add broccoli florets and vegetable broth. Bring to a simmer and cook until broccoli is very tender, 8–10 minutes.

    Remove from heat and let cool 2 minutes. Use an immersion blender to puree soup until smooth.

    Return pot to medium heat. Stir in shredded cheddar until fully melted and smooth, about 2 minutes.

    Stir in heavy cream. Heat through but do not boil, 1–2 minutes. Season with salt and black pepper to taste.
