Ingredients
- 2 tbsp butter
- 1 medium onion, diced
- 4 cups broccoli florets
- 4 cups vegetable broth
- 1.5 cups sharp cheddar cheese, shredded
- ½ cup heavy cream
- 1 pinch salt and black pepper to taste

Melt butter in a large pot over medium heat. Add onion and cook, stirring often, until soft and translucent, about 4 minutes.

Add broccoli florets and vegetable broth. Bring to a simmer and cook until broccoli is very tender, 8–10 minutes.

Remove from heat and let cool 2 minutes. Use an immersion blender to puree soup until smooth.
