Ingredients
- 8 oz elbow pasta
- 1 lb crawfish tail meat (fresh or thawed frozen)
- 1.5 cups sharp cheddar cheese, shredded
- 3 tbsp butter
- ¾ cup heavy cream
- 2 tsp Cajun seasoning
- 1 whole lemon (halved)
- 3 tbsp scallions, chopped

Boil pasta in salted water until al dente, about 8 minutes. Reserve 1 cup pasta water before draining.

While pasta cooks, melt butter in a large skillet over medium heat. Add crawfish and Cajun seasoning, stirring gently for 2 minutes until fragrant.

Pour in cream and bring to a bare simmer. Add shredded cheddar in handfuls, stirring until melted and smooth, about 3 minutes.

Stir in drained pasta and 0.5 cup pasta water. Cook 2 minutes until sauce coats every piece; add more pasta water if too thick.

Squeeze lemon over the top. Taste and adjust seasoning with salt and pepper.
