Ingredients

  • 1 whole (about 1.5 lb) live lobster
  • 4 quarts water
  • 3 tbsp salt
  • 1 halved lemon
  • 1 leaf bay leaf
  • 4 tbsp butter

Instructions

  1. 1

Fill a large pot with 4 quarts water, add 3 tbsp salt, 1 halved lemon, and 1 bay leaf. Bring to a rolling boil over high heat, about 10 minutes.

  2. 2

Plunge the 1.5 lb lobster head-first into the boiling water. Cover and cook for 12-15 minutes, until the shell is bright red and a small leg pulls off easily.

  3. 3

While the lobster cooks, melt 4 tbsp butter in a small saucepan over low heat, about 2 minutes, until fully liquid and just bubbling.

  4. 4

Remove the lobster with tongs and let it rest for 2 minutes until cool enough to handle. Serve whole with the melted butter for dipping.

  5. 5

Crack the claws and tail with a nutcracker or the back of a heavy knife, and pull the meat from the shell to eat.
