Ingredients

  • 6 slices thick bread slices
  • 3 large eggs
  • ½ cup milk
  • 1 teaspoon vanilla extract
  • ½ teaspoon cinnamon
  • 1.5 cups sweetened shredded coconut
  • 4 tablespoons butter
  • ¼ cup maple syrup

Instructions

  1. 1

Cut each bread slice into 3 sticks, about 1 inch wide. Set aside.

  2. 2

In a shallow dish, whisk the 3 eggs, 0.5 cup milk, 1 teaspoon vanilla, and 0.5 teaspoon cinnamon until smooth.

  3. 3

Place the 1.5 cups coconut in another shallow dish. Dip each bread stick into the egg mixture, coating all sides, then roll in coconut to cover.

  4. 4

Melt 2 tablespoons of the butter in a large skillet over medium heat. Cook half the sticks, turning occasionally, until golden brown and crisp, about 4-5 minutes. Repeat with remaining butter and sticks.

  5. 5

In a small saucepan, melt the remaining 2 tablespoons butter with 0.25 cup maple syrup over low heat, stirring until smooth, about 2 minutes.

  6. 6

Serve the French toast sticks warm with the butter sauce drizzled over the top.
